GHOST DIRT PUDDINGS
Serves 4
150g 70% dark chocolate
6 egg whites
28g golden caster sugar
6 Oreo cookies
250ml double cream
50g white caster sugar
1 tube chocolate writing icing
Melt the chocolate, stirring every 30 seconds, in a bowl over a pan of simmering water. Whisk the egg whites to soft peaks, scatter in the golden caster sugar and whisk again to form stiff peaks. Add a big tablespoon of the egg white to the melted chocolate and mix vigorously, working fast so the chocolate doesn’t cool and harden. Then fold in the remaining egg white. Spoon into 4 glass ramekins and refrigerate for 2-3 hours.
When ready to serve, pulse the Oreos to create crumbs. Sprinkle over each ramekin to create “dirt”. In a large mixing bowl, combine the double cream and white caster sugar. Beat until stiff peaks form; transfer to a large Ziploc bag and cut off a corner. Swirl the whipped cream on top of each ramekin, and add eyes to make a ghost.
